Elm Oyster

Hypsizygus ulmarius is an Oyster-like mushroom in appearance, however many gourmands consider it to have a better texture and flavour. It has a smaller spore load than oyster mushrooms, however,  unlike the oyster mushroom it should not be picked once the cap becomes more or less convex, as it continues to expand in size rather than disintegrate. In TCM and Japanese culture, the Elm Oyster is used  for disorders of the alimentary canal and for its anti-cancer properties.
